Homemade Crinkle Fries A crinkle cutter is needed for this recipe Here is a link to a good quality and inexpensive cutter: https://amzn.to/3hYwJUY Here is a link to our infrared thermometer: https://amzn.to/3CzGv9f We started with 5 medium size russet potatoes for this recipe. The Russets are the best in our opinion for fries, they have a high starch content. The key to great fries is a 2 step cooking process. First, the blanch- which helps to removes the moisture content from the potatoes and helps them crisp up when frying. the second fry is to crisp up and brown the potatoes. Recipe: Ingredients: 5 each- medium russet potatoes 1/4 cup- kosher salt 3/4 cup- white vinegar Oil for frying Method: Peel the potatoes with a potato peeler. Using a wrinkle cutter, slice each side and ens to create a rectangular shape. Make slices in the potato to the size desired, remember, larger sizes will need additional cooking time. In a mixing bowl, 2 qt cold water, add salt and white vinegar and stir. Add the potato slices to the water and let soak for 30 minutes. The vinegar helps to reduce oxidizing, or browning of your potatoes while exposed to the air. Lay potatoes out on a baking sheet and pat dry with a kitchen towel or paper towels. let the potatoes sit at room temperature to sry our for 1 hour or so. We place the baking sheet in front of a fan to dry out faster. Heat the oil to 365F, fry the potatoes in batches to keep from crowding. Remove when the float to the surface, about 6 minutes. Lay the potatoes back out on a sheet pan and freeze for 2 hours. Fry the potatoes a second time at 365F, remove when they have browned and crisped up. Season with salt. Our favorite fry sauce. Recipe: Ingredients: 1 cup- mayo 1/4 cup- ketchup 1 TBSP- dijon mustard 1 TBSP- dill pickle juice 1 tsp- Worcestershire sauce 1/2 tsp- cayenne pepper Method: Add all of the ingredients to a mixing bowl, whisk to combine and refrigerate.
