One way to identify these items globally is looking for the PDO (Protected Designation of Origin) label. I started at the Prosciutto di San Daniele (PDO) factory in Friuli Venezia Giulia. Here is a behind the scenes look at the chilling, trimming, salting, curing, pressing, and resting process, which is highly regulated and inspected. Next I visited Mulino Zoratto, a family run milling facility dedicated to small scale farming and producing.
