What I Eat In A Day At A Wellness Retreat | The plant-based, healthy, vegan menus at my retreats

You can learn more about Hello Gorgeous Retreats by visiting SophieUliano.com/HGR I think we all have worst-case-scenario visions of hoarding airplane peanuts in a yurt when we think of a wellness retreat - and that vision intensifies when you hear “plant-based meals” associated with any Gorgeously Green retreat. But! As I prepare for my upcoming Hello Gorgeous Retreat (October 21-25, 2018) in Palm Springs, I have to tell you about the incredible meals my team is putting together with The Miramonte Resort & Spa. Every meal is designed to fit into a larger plan for the day - We want you to feel full and satiated throughout the day, while also enjoying all of the incredible activities we have planned for you. Case in point: Before every morning yoga class (yes, we have twice-daily yoga classes), you’re greeted with a smoothie buffet. Grab your smoothie, enjoy a few sips, and then feel wonderful as you start your day with a loving yoga session. After yoga, we all eat breakfast together - we’re talking avocado toast, homemade granola, chia puddings, fruit salad, coffee, tea … the works! I’m so excited to welcome you to breakfast as we watch the sun over the Santa Rosa mountains together.
After breakfast, we head into workshops and seminars covering all aspects of wellness. Which tees us up perfectly for lunch, when we have gorgeous on-the-go buddha bowls or wraps or salads. Chef Paul puts together the most delicious portable lunches for us so we can keep working while we eat together. I’m already craving his grilled veggie wrap with hummus dip. Dinner is, quite simply, breathtaking. We dine al fresco and family-style, so meals consist of delicious food, amazing friends, and so much laughter. I think my favorite meal last year was Chef Paul’s Moroccan feast - African peanut soup followed by dips of every flavor, grilled vegetables, couscous, flatbreads, roasted potatoes and fresh fruit with coconut cream for dessert. It was breathtaking, and just one of four incredible dinners Chef Paul made for us throughout the week.
At the end of the day, ladies, this is what I’ll say: Hello Gorgeous feeds your body and soul. If you’re curious about a plant-based diet, this is your opportunity to learn more by experiencing five gorgeous days of plant-based foods (trust me, you’ll feel amazing at the end). If you feel like your body needs a reset coming out of summer and heading into the holidays, this is the perfect opportunity. If you’re worried about being hungry: don’t be. Plant-based eating is not about starvation, it’s about fueling your body with nutrients that keep you feeling great. And if you want to lose weight, I’m fairly confident we have you covered there too. Transitioning to a plant-based diet (even for just a few days) can be transformative.
