Alu: 3 (400 grams) 2. Mustard Oil: 2 tbsp 3. Nigella Seeds / Kalo Jeera / Kalonji : 1 tsp 4. Turmeric Powder : 1/2 tsp 5. Garlic Paste: 1 tbsp 6. Green Chillies - Slit : 3 7. Tomatoes: 2 (250 grams) 8. Warm Water: 1/2 cup 9. Bamboo Shoots: 1 cup 10. Green Peas : 1/2 cup 11. Sugar: 1/2 tsp or to taste 12. Tomato Ketchup: 1 tbsp 13. Coriander Leaves/ Cilantro - Chopped : 1 Cup 14. Salt: To taste Steps: 1. Peel and cut potatoes into wedges 2. Heat some mustard oil in a pan (You can use canola oil/ vegetable oil instead as well) 3. Add nigella seeds and let splutter 4. Add the potato wedges 5. Stir-Fry on high heat for a few seconds 6. Add turmeric powder 7. Sauté on high heat for 5 minutes 8. Add garlic paste and toss 9. Add slit green chilies 10. Cut tomatoes into wedges(similar to potatoes) and add to the pan 11. Toss on medium-high heat until tomatoes are slightly mushy 12. Add some warm water 13. Add salt to taste 14. Cover and cook until potatoes are tender 15. Add bamboo shoots 16. Add green peas 17. Mix well 18. Add tomato ketchup 19. Add sugar to taste 20. Add chopped coriander leaves 21. Give a final mix 22.
