How to make delicious Fauxtato Salad (Dr Poon, Low Carb)

Fauxtato Salad There are a few versions of this low-carb potato salad substitute online. This one is my favourite but by all means add any ingredients you like in your potato salad. It can be suitable to Dr Poon's diet if you use an approved mayonnaise such as Hellman's lite olive oil mayo or any other you can buy at the clinic. INGREDIENTS: 1 large head of cauliflower, cut in large pieces and cooked until fork tender (not mushy) 4-6 green onions, sliced 4 stalks celery, minced finely 4 hard boiled eggs, diced or mashed 4-6 Lg Tbsp mayo 2 small dill pickles, sliced half-salt and pepper to taste You can cook the cauliflower any way you like (microwave, boil or steam) but be sure to get it just fork tender, not mushy. It's taking the place of potatoes in this salad, so you want a bit of a bite to it. Chop veggies and eggs to your liking. Then chop the cauliflower in larger, bite size chunks. Mix well, then add mayo 1-2 Tbsp at a time, mixing well before adding more - the amount you'll need depends on the size of your cauliflower head. You can get by with much less mayo in this salad than you might in a traditional potato salad. Add half-salt (reduced sodium) and pepper to taste. Sometimes I like to add a bit of mustard as well - add any seasoning you feel it needs. You can eat it right away, but the flavour is best if you cover and refrigerate it for a couple of hours first. This is a summer favourite in my house, and I bring it to summer parties with friends and family to ensure I have low carb options - everyone enjoys it though, not just low-carbers.
