ZUCCHINI FEHTTUCHINI ALFREDO: a Healthy Twist on a Classic Dish

Hey there food enthusiasts, today we've got a healthy twist on a classic dish: Zucchini Fehttuchini Alfredo. Get ready for a flavorful meal that's low on carbs and high on taste. This pasta will nourish your body with nutrient-packed ingredients wrapped in super creamy Alfredo sauce. Let's get started!) Ingredients: Makes 2 servings 1 tablespoon Ghee oil 2 medium zucchinis 1 onion some Leek 400g mushrooms 1 teaspoon Italian seasoning For the Sauce: 200g silken tofu or any cream cheese 100g soy milk 2 сloves garlic 1/2 teaspoon dried oregano For garnishing fresh parsley and other greens to taste ;) Method: Wash zucchinis and peel them into thin strips using a vegetable peeler. Stack the strips on top of each other in batches and cut them in half lengthwise. Heat Ghee oil in a frying pan over medium heat. Add onions and cook for 5 minutes. Add mushrooms and cook for 10 minutes or until all the water evaporates. Add the seasonings and zucchini strips. Give it a toss and cook for 10 minutes or until zucchini is soft. Make the Alfredo sauce by placing all the ingredients into a blender and pulse until it’s creamy and smooth. Pour the sauce over your cooked zucchini pasta and give it a good toss.
