Goan Bimbli Pickle | Spicy Bilimbi Pickle | Easy Pickle Recipe

Bilimbi or as they are commonly called in Goa Bimblis or Bimbla. They are yellow-green in color and are extremely sour with thin soft skin and crunchy and juicy flesh. In goan villages, this bilimbi fruit is consumed raw. They may be consumed raw or maybe dipped in rock salt. This fruit may be processed into pickles, relishes, chutney and preserves. Today I will share with you a super quick recipe on how to prepare Bimbli Pickle/ Bimblanche lonche. The pickle smells so perfect; just like summer. What that bell icon does is it instantly notifies you every time I post a yummilicious video on my channel. Storage : This Bimble pickle lasts well for 3 to 4 days at room temperature. I would suggest you refrigerate this pickle as it lasts well until a month. Important Notes: 1. Cut off both ends of the bimbla as it affects the shelf life of the pickle. 2. If you notice any damaged bimblis make sure you discard them as this will in turn affect the quality and shelf life of the pickle. 3. Make sure you cool down the heated oil completely before adding it to the mixing bowl. 4. Oil is used in goan pickles for the spices to absorb into the bimbli fruit. Hence, it would be advisable to consume this pickle 24hrs after preparation as you will find the bimblis quite crunchy and extremely sour on your teeth. 5. Oil is also added to coat the pickle for that no air enters and it doesn't lead to spoilage. Make sure to stir the pickle every two days even if stored in the refrigerator. 6. Use a clean and dry spoon to take out the required pieces of the pickle. Ingredients: Bilimbi fruit / Bimblis - 800gms Fenugreek/ Methi seeds - 1 tbsp Mustard seeds - 2 tbsp Oil - 1/4 cup ( You can use regular cooking oil that doesn't have a strong odour) Asafoetida/ Hing - 3/4th tsp Salt - 2 tsp Kashmiri Chilli Powder - 2 tbsp ( you may adjust the spice level here) Do check out some of my other recipes too!
