Sapodilla / Chiku fruit tasting UK and seed harvesting

So here I'm trying my first ever Sapodilla. As I don't know much about them apart from watching videos I didn't know how to tell if the fruit was ripe. It looked ok from outside but having done more research after tasting, it now seems the skin should have been more wrinkled and soft to indicate ripeness. Obviously I have no idea how to help ripen the fruit more after it's been picked. It seems unripe sapodilla contains something called saponin which has a similar effect to the tannin found in unripe persimmon i.e. makes it astringent which puckers up the mouth inside. This fruit was edible with some slight astringency but clearly wasn't the dark caramel colour inside I've seen on other videos and didn't have that sweet sugary flesh they are known for ??. Maybe next time I'll taste a ripe one but the important thing was to get the fresh seeds which at least was successful ??
