How to Make Coconut Rice Rice is a great go-to side dish. Elizabeth loves all types: basmati, brown, ginger, yellow, and fragrant coconut rice. It's rich and tasty and goes well with stewed meats, savory chicken or even as a sweet treat with a little cinnamon on top. Best part is it's easy to make! Check out Elizabeth's Coconut Indian Curry recipe here: http://bit.ly/14jg85p Full recipe for Coconut Rice: Found on my blog at: http://www.gourmetkoshercooking.com/2009/07/coconut-rice/ 2 cups rice 2 ½ cups coconut milk(this is available in your local market, don't mix it up with the cocktail mixer called cream of coconut, this is just pure coconut milk in a can) 1 cup water 1 tablespoon sugar 1 teaspoon salt ¼ cup raisins (optional) Put all the ingredients into a saucepan. Bring the mixture to boil. Turn down the heat, and cover the pot. Simmer the rice for 15 -20 minutes. This makes about 4 cups of rice which is enough for 4 people. Elizabeth says: "Its that easy.
