#shorts Our friend Aida's Herby Garlic Olive Dip couldn't be easier to make or more delicious! It's the perfect addition to any party (or, just a really great snack). Get the recipe: https://saltandwind.com/how-to-make-olive-dip/ INGREDIENTS 1/2 cup extra-virgin olive oil 6 medium garlic cloves peeled and grated 3 sprigs fresh rosemary 1/4 teaspoon crushed red pepper flakes or ground red pepper like paprika or Piment d'espelette pinch fennel seeds (optional) 1/2 teaspoon kosher salt 1 cup canned California ripe olives drained and finely chopped 1 handful fresh Italian parsley finely chopped 1/3 cup finely grated Parmigiano-Reggiano cheese INSTRUCTIONS Combine the olive oil, garlic, and rosemary in a medium frying pan and heat over low heat until the mixture simmers about 4 minutes. Turn off the heat, remove the pan from the stove, and add red pepper flakes or ground red pepper, fennel seeds, and salt. Set aside for 5 minutes to cool slightly Mix the grated cheese, parsley, and olives in a flat-rimmed serving dish. Discard the rosemary, pour the olive oil into the serving dish, and mix to combine evenly. Taste and add additional salt and pepper as desired. Serve with focaccia, bread, or freshly cut vegetables like fennel, cucumber, carrots, and radishes.
