Holiday Edition - Sugar Free Candied Pecans

LSU AgCenter Prep Time: 5 minutes Cook Time: 6 minutes Total Time: 11 minutes Servings: 16 (12 pecans) Calories: 139 kcal Ingredients: 1 1/2 cups granulated sweetener of choice, divided (Stevia, Monk Fruit, Splenda or Swerve) Or mix of white and brown 1/4 cup water 1 teaspoon vanilla extract 1 tablespoon cinnamon Instructions: - Heat a saucepan or skillet on medium heat. - Add 1 cup of your granulated sweetener, water, and vanilla extract and mix until fully combined. Allow to heat up, stirring occasionally. Consistency will be liquid. - When the sweetener has completely melted, add your pecans. Start to mix the pecans in the sugar liquid, ensuring each nut is evenly coated. Continue stirring occasionally, 2-3 minutes. Then turn heat off. - Remove the pan from the stove and allow to sit for 2-3 minutes. As it starts to cool, mixture will start to crystallize like a praline consistency. Stir to prevent clumping. - Once cooled, transfer to mixing bowl and toss with the remaining half cup of granulated sweetener and cinnamon. Cover in a sealed container. Keep in an air-tight container, for up to 3 months. Candied pecans are also freezer friendly too.
