Eggplant Raita Recipe

Happy New Year Friends! Don't know about you but I had a very indulgent holiday season. Are you trying to detox, eat clean or even doing the whole #veganuary thing? While I'm not one for resolutions, I am trying to #eatmoreplants. And I am always trying to eat clean. Or at least find cleaner version of the foods I love. This Eggplant Raita or bengan raita as we call it, checks both those boxes. Pan fried eggplant is delicious on its own, but added to a basic raita and you have a fantastic side for any spicy desi meal. Try it with biryani, curry, or just do what I do, and eat a whole bowlful as a meal. The secret is to add a fresh tardka (spice infused oil) at the end to give your raita a flavour boost (and some of those good fats that are good for your heart and make this a filling meal).
