- Lamb Loin Roast roasted on the PK Grill/Smoker - part 1/2 - Cod Fillets deep fried in the 5 qt Lodge Dutch Oven - part 2/2 (https://youtu.be/fuuHDPm_jqs) 3 lb lamb loin roast brushed with a seasoned mustard garlic aioli. Prep: - trim lamb loin of all excess fat & silver skin. - brush lamb with aioli paste. Aioli: - 1 tbsp mustard garlic aioli - 1 tbsp Mrs Dash (original blend) - 1 tsp dried rosemary - 2 tbsp Etra Virgin Olive Oil - mix all ingredients. Cook: - light coals & prepare grill for indirect cooking. - roast lamb indirect @ a temp between 250-300 deg F to an internal temp of 115-120 deg F. - take lamb off grill let rest 10-15 minutes. - return to grill & sear over hot coals to an internal temp of 130 deg F. - slice lamb into chops & serve.
