Follow me on: Facebook! https://www.facebook.com/HeatherGerhardt11/?ref=bookmarks Instagram! https://www.instagram.com/heathergerhardt11/ Pinterest: https://www.pinterest.com/YoutubeHeatherGerhardt/ RECIPE: Crust 1 cup – coconut flour 2 eggs, lightly beaten 1 Tbs – coconut oil 1 tsp – vanilla extract 1/4 cup powdered Monk Fruit 1/4 tsp – salt 8 Tbs – cold butter, cut into cubes Mix everything in a food processor except butter until combined. Add butter ad pulse until in small chunks. Press into 9" Pie pan evenly and poke all over with a fork. Bake at 400 degrees for 10-12 min. or until golden brown. Place on wire rack and cool. Filling Ingredients: 1 cup Monk Fruit (or sweetener of choice) 1/4 tsp – xanthan gum 1/4 tsp – salt 1 can – unsweetened coconut milk 1 can – unsweetened coconut cream 4 – egg yolks 1 Tbs – coconut extract 1 teaspoon vanilla extract In a dry sauce pan, add sugar, xanthan gum, salt and mix. Add both cans of coconut cream/milk and stir until bubbly. Once simmering, add in four egg yolks, one at a time and continually stir until it coats the back of a spoon (about 7 min). Remove from heat, add vanilla and coconut extracts and cool for 10 min, while continually stirring. Pour into pie crust and cover with Saran Wrap, pressing down on the custard to remove air bubbles. Refrigerate overnight (12 hours) Toping Ingredients: • 1 cup – heavy cream • Powdered Monk fruit 2 tablespoons-(better yet, liquid, as the regular monk fruit does not dissolve well and may still be grainy) 1 teaspoon coconut extract Beat into whipped cream and top the custard.
