Parsi Ravo | Easy Semolina Pudding | Parsi dessert recipe | Suji dessert

Ravo is a traditional Parsi pudding recipe, which is prepared with semolina, milk and dry fruits. It is very easy to make this Parsi Ravo, however be prepared for a good arm workout as it requires a lot of stirring :) Ingredients 100 gms semolina 150 gms sugar 1 litre milk 6 table spoons ghee 2 table spoons charoli 2 table spoons sliced almonds 3 table spoons golden rasins 1 tea spoon vanilla essence 1/2 tea spoon cardamon powder 1/2 tea spoon nutmeg powder 1/4 tea spoon salt Method Place a pan on medium heat and add 1 table spoon ghee Add 2 table spoons charoli to this and stir fry for 30 seconds Add 2 table spoons sliced Almonds to this and stir fry for 30 seconds further Add 2 table spoons golden rasins to this and stir fry for 1 minute or until the rasins fluff Remove this from heat and transfer to a bowl and keep aside Place a wok or a kadai on medium heat and add 5 table spoons ghee Stir it until it melts and add 100 gms semolina to this Stir this for 3 to 4 minutes until it fluffs Tip: The color of the semolina should not turn dark, if you feel the semolina is changing color turn the heat off and add the next few ingredients Add 1 and 1/2 cup warm water , 150 gms sugar, 1/4 tea spoon salt and stir and cook all of this for another 5 minutes Add 1 litre warm milk to this and cook for 15 minutes stirring continuously Tip: Adding warm water or warm milk instead of room temperature fastens the cooking process Keep stirring and removing the mixture from the sides of the wok or kadai as well as scrapping the bottom of the wok or kadai making sure the mixture does not stick or burn down ( this is a good arm work out } You will see that the semolina will start to soak in the milk and ghee and make this mixture thick When it reaches a porridge like consistency turn the heat off At this point add 1/2 tea spoon cardamon powder, 1/4 tea spoon nutmeg powder, 1 tea spoon vanilla essence and stir it in well Transfer this to a nice serving dish and garnish with the fried dry fruits and nuts This semolina pudding can be had warm or chilled If you would like to serve it chilled then refrigerate for 2 to 3 hours before serving
