HOW TO MAKE PANCIT | Easy, Cheap, and Delicious Filipino Rice Noodles

Hello all! Welcome to the first edition of the PonzoChives cooking tutorials! Today, we take a little spin on a classic Filipino dish, Pancit Bihon. This dish is a sweet point of nostalgia, taking me back to when my mom would make this for celebrations like new years or birthday parties. It is super easy taking about 15-20 minutes to cook, cheap (all the ingredients cost less than $15), and packs a ton of flavor in this dish. See the recipe below! 1 16-ounce package of rice noodles 1.5 lbs of shrimp (peeled, deveined, fresh shrimp for better results) 1 cup carrots (shredded if possible) 3/4 cup green beans (sliced thin and diagonal) 3 cloves of garlic 1/2 - 3/4 of an onion (not shown in video) 2 tbps mirin (optional) 2 tbps oyster sauce 4 tbps soy sauce 2 tbps chicken stock 2 tbps rice vinegar (optional) 2 tbps chili paste (optional) 2 tbps neutral tasting oil In a pan, sautee carrots, green beens, and garlic in cooking oil until tender. In a separate boiling pot, boil some water until barely simmering and salt your water. Cook the veggies, adding chicken stock as necessary to deglaze the pan. Once the veggies are tender, add in the shrimp. When you add the shrimp, and the rice noodles to the simmering water and cook for 2-4 minutes (until al dente). Once the shrimp is fully cooked and the rice noodles are al dente, add the rice noodles to the pan. Then add your seasonings (mirin, oyster sauce, soy sauce, rice vinegar, and chili paste) and mix well. Voila! Now you have some delicious filipino rice noodles.
