It’s an introduction to fermentation overall. I was tired of seeing all the other fermentation resources knowing they had left out the most important information. Specifically, other sources discussing fermentation talk about the process only mentioning one or two organisms that make the whole process work. The reality of fermentation is that each kind (of 8 types) involves (I) the activation and engagement of enzymes via the work of a community and/or serial processing of a variety of (2) yeast/fungi, (3) cyanobacteria/bluegreen algae, and (3) other bacteria. In Pai, when we go foraging, we talk about iwilcwom – picking up sticks, the gathering in of all the brothers and sisters that make our food possible, connecting ourselves to others, paying attention to the details and the big picture, not cutting corners, focusing on gratitude. It’s the same verbiage we use to describe networking, including strangers and guests since they might teach and help us, even those who we must forgive, who might (have) cause(d) us damage, the covids of the world that force us to slow down and do things right. Love God/large existence, love the world/my small existence. Remember the life that is within me. Forgive all those who have helped or harmed me. Then sing my song of thanks! Each thing has a voice. Each thing a song. But behind them all. One hears the voice of existence. And it is saying: “Do not be afraid of existence.” I wanted a discussion about fermentation that acknowledged and gave credit to all the little organisms overlooked in the process and brought them into the picture. Not just because each has a specific effect on process success and flavor (you need to know everything that goes into making the cake, the salad ingredients, the drink mix), but because by leaving them out, ignoring them and not giving them their due, we diminish ourselves, we become selfish and lose respect for the earth, we forget to say, “Thanks!” Mark Lewis/Paawiikiimaap, manujib@yahoo.com, 480.268.3162
