Maash Polo (Persian mung beans and rice) recipe

Hi there!ready to cook? 📌ingredients: - 1 cup of mung beans - 2 cups of Persian rice - 250g ground beef - 1 onion - 5 cloves of garlic - 2 tbsp salt - 1 tbsp salt - 1 tbsp black pepper - 1 tsp red pepper - vegetable and olive oil - water - 3 tbsp saffron - 2 slices of lavash bread 📌preparation: 👀first of all, mung beans if full of little stones make sure to remove them carefully! - add the mung beans to a bowl. - add 2 cups of water and let it rest for 24 hours. 👀mung beans are so hard to be cooked by soaking them in the water you may reduce the cooking time for them but still, they maybe be semi-cooked! - add the rice to a bowl. - add 2cups of water and let it rest for 3 hours. 👀by doing this you will have better-cooked rice as well. - peel and chop the onion. - mash the garlic. - fry them till trans lucent. - drain the mung beans and fry them for 5 mins. 👀 it's just another way to help the mung beans to be cooked better and also the color is going to be bright green. don't fry them for more than 5 mins! - add the ground beef to the frying onion and garlic and stir and fry for 10 mins. - after 10 mins, add the spices ( 1 tbsp salt, black pepper, and turmeric+ 1 tsp red pepper). - fry for 5 mins. - add 2 tbsp saffron and keep frying for 15 mins. - boil 5 cups of water. - add the fried mung beans to the boiling water. - add 1 tsp salt and 2 tbsp vegetable oil. - boil the mung beans till semi-cooked. - when the mung beans are semi-cooked, drain the rice and add it to the boiling water and mund beans. - boil them all together for 15 mins and then drain them together. - prepare a pot. - mix 2 tbsp vegetable oil and 1 tbsp saffron in it. - add 2 slices of lavash bread for Tahdig! - add the mung beans and rice. - add the ground beef mixture, - mix 2 tbsp olive oil and 6 tbsp water and add it to your Maash Polo. - use a piece of fabric as a streamer cook for 1.5 hours on low heat and then enjoy it!
