Best Authentic Middle Eastern Couscous

Couscous is made by shaping and rolling moistened semolina wheat and then coating the granules with finely powdered wheat flour. Once coated, the wheat is formed into small grainy balls of couscous and then put through a sieve. The ball-like pellets which fall through the sieve are re-coated until all are retained in the sieve. It is extremely versatile as a side dish or a complement to your meal as it has a very mild flavor and allows your spices and main entree to stand out. It is a great resource for fiber, protein, trace mineral selenium, and B vitamins. Couscous is an all--natural food in an easy to digest form. Here is the recipe for cous cous (maftoul): 1) Boil chicken with onion and seasonings (salt, pepper, allspice, cumin, and any other seasonings you may prefer) to create a broth. 2) Under a low flame stir fry the cous cous (maftoul) in a little olive oil. Fry until golden brown. Add chickpeas. 3) Add 1-1/2 cups of boiling broth from chicken to every cup of cous cous (maftoul). Cover and cook on low heat for 15-20 minutes or until tender. 4) Remove from heat and let stand for 5 minutes. 5) Serve cous cous (maftoul) with broth and chicken over it. 6) Enjoy! This recipe can be called cous cous, maftoul, or mughrabiya depending on the region of the world.
