Eggless Gnocchi

Boil 2 large russet potatoes until tender, about 20 minutes. Let them cool slightly, then peel and mash them until smooth. On a clean surface, make a mound with the mashed potatoes and create a well in the center. Add 1 cup of all-purpose flour and a pinch of salt to the well. Gently mix the flour and potatoes together until a dough forms. Knead the dough briefly until smooth, adding more flour if necessary. Divide the dough into four parts. Roll each part into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces to form the gnocchi. Optionally, press each piece lightly with a fork to create ridges. Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes.
