Light heaven cake with mandarins, cream, meringue and almonds

A fluffy base of sponge cake, a fluffy filling of fruity tangerines and cream and on top crunchy sweet meringue with toasted almonds! The heaven cake is a real dream and perfect for a coffee afternoon. Ingredients: Mixed dough 100 g butter soft 80 g sugar 1 package Vanilla sugar lemon flavoring optional 4 egg yolks 125 g flour ½ package baking powder 1 pinch salt 4-6 tbsp. milk Meringue 4 egg whites 150 g sugar 1 pinch salt 80 g almond flakes Filling 2 cans tangerines 20 g sugar 400 g cold cream 1-2 tbsp San Apart 1 tsp vanilla extract Instructions: Prepare the batter Preheat oven to 180 degrees top/bottom heat. Beat butter, sugar, vanilla sugar and lemon flavoring until creamy. Gradually stir the egg yolks into the butter mixture. Add the milk and stir in well. Mix flour, baking powder and salt in a bowl. Sift flour mixture into egg-butter mixture. Mix everything together to form a smooth dough. If the dough is too firm, you can add a little more milk. Line 2 baking pans with baking paper or grease them. Divide the dough in half and pour into the two baking pans. Pre-bake the bases one after the other on the middle rack for about 10 minutes until light yellow. Mix the meringue Beat egg whites, sugar and a pinch of salt with a mixer until firm. Spread half of the meringue mixture on each cake base. Use a tablespoon to make waves on the meringue mixture. Sprinkle 40 g almond flakes over the meringue in each case. Continue baking the two cakes one after the other at 180 degrees for about 15 minutes until the flaked almonds are lightly browned. Loosen the finished cakes from the edges with a knife. Cut one of the two cakes into 8-10 cake pieces. Let both cakes cool completely. Place the uncut cake layer on a large plate or pie plate. Place a cake ring tightly around it. Prepare filling Drain tangerines well in a colander. Spread the tangerines on the cake base. Whip cold cream together with San Apart, sugar and vanilla extract until stiff. Spread the cream on the tangerines. Place the cut pieces of cake base on the cream and press lightly. Allow the Himmelstorte to set in the refrigerator for 2 hours. Before serving, decorate with chocolate stars and enjoy.
