Braised Brisket Pozole Rojo

Braised Brisket Pozole Rojo Recipe:
Makes: 6 servings
Prep Time: 15 minutes
Inactive Time: 6-8 hours
Cook Time: 30 minutes
Ingredients:
2 tbsp. oil
1 ¼ lbs. beef brisket, 1" cubes
1 cup onion, chopped
1 tbsp. garlic, minced
1 pouch Tres Hermanas Roasted Chipotle Mexican Cooking Sauce
4 cups beef stock or water
1 14.5oz. can Hominy
Kosher salt, to taste
Ground black pepper, to taste
For the slaw:
8 oz. green cabbage, shredded
2 tbsp. fresh oregano, chopped
1 ½ cup radish, thinly sliced
1 cup cilantro, minced
Directions:
1. In a 4-quart pot, heat oil over medium-high heat. Sprinkle beef with salt and pepper and sear in batches until caramelized. Remove from pan and reserve. Place in slow-cooker.
2. Once beef is seared, add onions, garlic, Tres Hermanas Roasted Chipotle Mexican Cooking Sauce, stock, and hominy to slow-cooker and cook for 6-8 hours.
3. Once beef is tender, season with salt and pepper, and serve with shredded cabbage, oregano, radishes and cilantro.
Chef's Tips:
• Ask your butcher for the ‘Point’ end of the brisket. It has more flavor than the ‘Flat’ end.
