Here is how we did it:

Ingredients:

Preparing the rind:
6 cups watermelon rind.
1/4 cup salt dissolved in 2/4 cup warm water.

For the preserves:
prepared watermelon rind
4 cups sugar
1/4 cup bottled lemon juice
7 cups warm or cold water
3 small cinnamon sticks
5 whole cloves
2 cardamom pods

Method:
- Prepare the rind:

trim green skin and pink flesh from watermelon rind. (enough for 6 cups)
let rind rest in cold water for 5 minutes.
dissolve the salt in the warm water and pour over the rind.
cover and refrigerate for 6 hours.
drain and rinse in cold water.
cover rind with cold water again and let it stand for 30 minutes
drain the water.
in a large saucepan, cover the rind with water and bring to a boil.
lower the heat and boil for 10 - 15 minutes.

- making the watermelon preserves:

in a stock pot, add the sugar, lemon juice and 7 cups water.
bring the mix to a boil. lower the heat and simmer uncovered for 5 -6 minutes.
stir in the rind.
add the cinnamon sticks, whole cloves and cardamom pods.
bring to a boil again.
reduce heat to simmer for 45 minutes uncovered.
remove the cinnamon sticks, whole cloves and cardamom pods
remove from heat.
ladle hot mix into sterilized jars, leaving 1/4 -in headspace.
wipe the rims and place lid on jars until fingertip tight.
place jars into a very hot sink or deep bowl with hot water. (water must not cover or touch the lid)
let the jar cool completely in the water.
wipe and store in a cool dry place or in the fridge.

Serving suggestion:

Enjoy with toast
Place on a cheese platter
add to waffles
