2019 - Stan and Tony Make Deer Sausage - 02 - Stuffing, Smoking, and Hanging
Detailed video showing how to mix, season, grind, stuff, and smoked the world’s best deer sausage. Filmed in the Texas Hill Country.
Recipe:
40 lb. mixed pork or beef & ½ deer meat
1 ¼ cup salt
1 ¼ cup coarse black pepper
4 Tbl red pepper (dried Anaheim)
3 tsp garlic (powder, minced or dry)
¼ cup mustard seed
6 tsp saltpeter (less if using curing salt)
Mix and spread on 40 lb of meat. Mix meat and seasoning at least three times. Grind with large (1/4/ or larger holes and then switch to small hamburger grind. Fry a pattie or two of sausage before beginning second grind. Taste and if too salty add beef or pork. If too bland sprinkle with salt and turn. Grind a 2nd time. Stuff sausages or make patties. Dry or freeze after smoking two times.
