What I Ate Today Using Up What I Have 🌯 🍨 Recipes and Easy Swaps
What I ate today at home cooking for one as a plant-based vegan (who's trying not to grocery shop and using what I have on hand!) In this video you'll see what I eat in a day as well as some easy meal-prep friendly ideas and tips for avoiding the grocery store by using ingredients that you already have on hand. My Tahini Sauce (I use a little less water to make it a spread. It also thickens a lot in the fridge overnight if you're meal prepping) https://nikkivegan.com/highly-adaptable-garden-veggie-chickpea-salad/
DIY Vegan Dark Chocolate Sauce
- 1 tsp refined coconut oil
- 1 tbsp cacao powder
- 1 tbsp maple syrup
- pinch of salt
Melt the refined coconut oil and stir in the cocoa and maple syrup. Mix until smooth and add a pinch of sea salt if desired.
Pour over ice cream for a "magic shell" effect. You can add more sweetener if you like. Enjoy!
