Red Velvet Cake

Ingredients
• 177 g plain flour
• 10 g cocoa powder
• 187 g butter (room temperature)
• 205 g sugar
• 3 large eggs
• 30 g buttermilk
• 1 tsp vanilla extract
• Red food colouring (as needed)
• 1 tsp bicarbonate of soda
• 2 tsp apple cider vinegar

For Cream Cheese Icing
• 75 g butter (room temperature)
• 120 g soft cream cheese
• 500 g icing sugar



Method

Part 1 – Cake
1. Sift together the plain flour and cocoa powder. Set aside.
2. In a large mixing bowl, beat the butter and sugar until pale and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Add half of the flour mixture and mix gently. Then add the remaining half and mix until combined.
5. In a small bowl, mix the buttermilk, vanilla extract, and red food colouring. Add this mixture to the cake batter and mix for a couple of minutes.
6. In another small bowl, combine the bicarbonate of soda and apple cider vinegar. Once it starts fizzing, immediately add it to the cake batter and mix for a few seconds.
7. Divide the batter into two equal portions.
• If you have a large oven, bake both at the same time.
• If not, bake one portion first, then the other.
8. Bake in a preheated oven at 170 °C (fan 150 °C) for about 25–30 minutes or until a skewer comes out clean.
9. Allow the cakes to cool completely before icing.



Part 2 – Cream Cheese Icing
1. Beat the butter and cream cheese together until smooth.
2. Gradually add the icing sugar and mix until light and fluffy.
3. Place one cake layer on a cake stand, spread icing over the top, and place the second layer on top.
4. Cover the whole cake with the remaining icing and decorate as desired.
