ALOO GOSHT
Prep Time: 10–15 minutes

Ingredients:
. Mutton – 1 kg
. Potatoes – 700–750 g (about 4 medium-sized)
. Onions – 400 g (about 4 medium-sized)
. Tomatoes – 350 g (about 3 medium-sized), make a paste
. Yogurt – ½ cup
. Ginger garlic paste – 2 tablespoons
. Turmeric powder – 1 teaspoon
. Coriander powder – 1½ tablespoons
. Red chili powder – 1 tablespoon (or to taste)
. Kashmiri chili powder – 2 tablespoons
. Salt – 1¼ tablespoons (or to taste)
. Whole black pepper – 1 teaspoon
. Green cardamom – ½ teaspoon (6–7 pods)
. Cloves – 10–12
. Cinnamon stick – 1
. Black cardamom – 1
. Green chilies – 8–10
. Fresh coriander – ½ cup, chopped
. Ghee or oil – 1 cup (or as needed)
Method:
1. In a large cooking pot, heat the ghee or oil.
2. Add the sliced onions and fry on high heat for about 1 minute.
3. Add the whole spices: black pepper, cloves, green cardamom, black cardamom, and cinnamon stick. Cook on high heat until the onions turn light golden.
4. Add the mutton and cook for 3–4 minutes on high heat, or until it changes color.
5. Add the ginger garlic paste and cook for another 2–3 minutes.
6. Now add the tomato paste, red chili powder, turmeric, coriander powder, and salt. Mix well and cook for 3–4 minutes until the masala is well cooked and the ghee separates from it.
7. Add the yogurt, stir well, and pour in 3–4 glasses of water.
8. Let it boil on high heat for 2-3 minutes.
9. Cover the pot and let it cook on low heat for about 1 hour, or until the meat is 80% tender.
10. After an hour, remove the lid, add the potatoes, and cook on high heat for 8–10 minutes until most of the water dries out.
11. When the masala thickens and ghee separates, add 3 glasses of water (or as much as you want for gravy).
12. Cover again and cook on low heat for another 10 minutes, or until the mutton and potatoes are fully tender.
13. Finally, remove the lid, add green chilies and fresh coriander, cover again, and let it sit on very low heat (dum) for 5 minutes.
Your delicious Aaloo Gosht is ready! Serve hot with naan or zeera rice.
NOTES:
We will roast the spices twice. First, at the beginning to eliminate the rawness of the spices. Then, once again at the very end so that the onions and tomatoes blend together well, and the gravy becomes completely smooth.
