Chicken Stew Recipe | Ready in 30 minutes

🔥 Welcome to my kitchen! Today I'm showing you how to make this flavor-packed, spicy chicken stew — Kenyan-style! This dish is marinated in a rich blend of spices, soy sauce, and creamy mala (or plain yogurt) for that perfect tenderness and bold taste.

Whether serving it with rice, chapati, ugali, or mashed potatoes, this chicken stew is guaranteed to be a hit!

📝 Ingredients:

Boneless chicken

Chicken masala

Ginger powder

Turmeric

Garam masala

Paprika

Cayenne pepper

Salt

Soy sauce

Mala / plain yogurt

Onion

Garlic

Cooking oil
👩🏽‍🍳 Method:

Marinate the Chicken:
In a bowl, mix the chicken pieces with chicken masala, ginger powder, turmeric, garam masala, paprika, cayenne pepper, salt, soy sauce, oil, and yogurt (or mala).
Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cook the Base:
Heat a little oil in a pan. Sauté the chopped onion until golden brown. Add minced garlic and cook for another minute.

Add the Chicken:
Stir in the marinated chicken. Let it cook on medium heat until it starts to brown and the spices become fragrant.

Simmer:
Add a dash of water to help it stew gently. Cover and cook until the chicken is fully cooked and tender (about 15–20 minutes), stirring occasionally.

Serve:
Enjoy hot with rice, chapati, naan, or even mashed potatoes!
