Have you noticed that milk suddenly boils over and spills, but water doesn’t? 🤔

When milk heats up, the fat and protein form a thin layer (malai) on top. This layer traps steam inside. The trapped steam creates bubbles that turn into foam. The foam expands quickly and pushes the milk over the edge of the vessel.

Water doesn’t contain fat or protein, so no layer forms — steam escapes easily, and it doesn’t overflow.
