"Instant Oatmeal" Recipe
by Faith and Flour
3 cups Rolled Oats
1 Tbs Vanilla
1 Tbs Cinnamon
1/2 cup Brown Sugar
1/4 cup Flaxseed
1 tsp Salt
Preheat oven to 325 degrees F.
Mix oats with vanilla and cinnamon in a roasting pan or rimmed baking sheet. Toast in the oven for 10 minutes.
Combine toasted oats with brown sugar, flaxseed and salt in a food processor. Pulse just until coarsely ground. Optional: Stir in nuts or dried fruit of your choice.
To make oatmeal:
Combine 1/4 -1/2 cup of Instant Oatmeal with 1/4 -1/2 cups milk. Microwave for 1 minute. Stir and return to microwave for 30 more seconds. Stir well and serve. Enjoy!

Granola
by Faith and Flour
8 cups rolled oats
1 cup sunflower seeds
1 cup chopped pecans
1 cup pumpkin seeds
1 cup coconut flakes (unsweetened)
1/3 cup coconut or olive oil
1/3 cup maple syrup
2 tsp. cinnamon
1/2 cup dried fruit (I use blueberries or chopped apricots)
Preheat oven to 350 degrees F.
Mix all ingredients except dried fruit in a large baking or roasting pan. Spread evenly.
Bake for 30 minutes total. Remove from the oven and stir every 10 minutes to roast the granola evenly.
When the granola is finished baking, remove from the oven and add the dried fruit.
Stir and allow the granola to cool on the countertop.
Pack in jars and enjoy!
