Smoked Mac n cheese
#smoked Mac n cheese #pellet smoker #rec Tec
This video we smoke some Mac and cheese on the Rec Tec bull
Ingredients :
1lb package of bacon
fry bacon and chop up into 1/4 inch chunks
1 box of pasta noodles
boil noodles per package instructions
1/2 stick of butter
1/4 cup all purpose flour
3 cups of milk
melt and mix butter and flour over medium heat then slowly add milk and continue mixing
8 oz cream cheese - cut into chunks
add to roux mix and stir until melted
8 oz of shredded cheddar cheese / divided in half
8 oz of shredded parmesan and Romano cheese / divided in half
6 oz of shredded smoked Gouda / divided in half
mix half the cheeses to roux and stir until creamy
add a tablespoon of kosher salt and 1/2 tablespoon of pepper and stir.
add cheese mix to drained pasta and stir well
now pour pasta cheesy goodness into a disposable pan and cover with foil
smoke for 30 to 45 minutes at 300 degrees.
take foil off - turn smoker up to 425 degrees add rest of cheese and bacon bits.
smoke for a additional 10 to 15 minutes or to the crust you like.
enjoy.
