Christmas Panzanella- a nutritious and delicious holiday meal!

Red and Green Holiday Panzanella Salad!

Our fluffy focaccia is tossed with holiday friendly green and red veg for a simple side that’s delicious and nutritious! Recipe here:

Ingredients:
1/2 Izzio Olive Oil and Sea Salt Focaccia
1 pint cherry tomatoes, halved
2.5 oz arugula
1/2 c roasted red bell peppers
8oz mozzarella balls (such as ciliegne)
1/3 c basil
Olive oil, red wine vinegar, salt, and red pepper flakes to taste

1. Preheat oven to 350 degrees. Cut Izzio Olive Oil and Sea Salt Focaccia into 1 inch cubes.
2. Transfer bread cubes to baking sheet, drizzle with olive oil and season with salt. Toss to evenly distribute oil. Bake for 20 minutes until bread cubes are golden and crispy. Let cool slightly.
3. In a large bowl, add tomatoes, arugula, bell peppers, mozzarella, basil, and bread.
4. Dress to taste with olive oil, red wine vinegar, salt, and red pepper flakes.
5. Serve immediately and top with extra red pepper flakes to garnish.
