三色齋 Tri Colour Gluten Dish (非油炸 non deep fried)

Gluten dough recipe / 筋粉團食譜

2.5 cups Gluten Flour 筋粉 二杯半
1 tsp Yeast 依士 一茶匙
1 TBSP Sugar 沙糖 一湯匙
1 tsp Salt 鹽 一茶匙
2 TBSP Oil 菜油 二湯匙
1.5 cups Warm Water 溫水 一杯半

Ingredients for sweet and sour flavour / 甜酸齋材料:

1 TBSP vegetable oil 菜油 一湯匙
½ cup ketchup 茄汁 半杯
1 cup water 水 一杯
2 TBSP Thai sweet chili 泰國甜酸醤 二湯匙
sauce
2 TBSP vinegar. 醋 二湯匙
⅓ cup sugar 糖 三分一杯

Ingredients for curry flavour / 咖喱齋材料:

1 TBSP vegetable oil 菜油 一湯匙
1 cup water 水 一杯
3 TBSP curry powder 咖喱粉 三湯匙
3 TBSP oyster sauce 蠔油 三湯匙
1 TBSP soy sauce 豉油 一湯匙
3 TBSP sugar 糖 三湯匙

Ingredients for oyster sauce flavour / 蠔油齋材料:

1 TBSP sesame oil 蔴油 一湯匙
1 cup water 水 一杯
3 TBSP oyster sauce 蠔油 三湯匙
1 TBSP soy sauce 豉油 一湯匙
2 TBSP sugar 糖 二湯匙

Steps / 步驟:

Mix yeast with gluten flour, then add other ingredients and add warm water the last. Mix everything together to form a dough. Put the dough in a container and cover it with plastic wrap. Place the dough in a warm place and wait until the dough becomes doubled of it’s original size.

先把依士和筋粉混合,然後加入其它材料,最後加水。把混合物差成粉團。放粉團入盆內,用保鮮紙蓋好,把其放在溫暖的地方,待其體積發大原本的兩倍。

Use scissors to cut the dough into little pieces and put these little pieces on a non-stick cookie sheet and cover with plastic wrap for 15 to 30 minutes.

用剪刀把粉團剪成小塊,放在不沾鍋的焗盆上,用保鮮紙蓋好,大約等 15 至 30 分鍾。

Pre-heat oven at 375 F or 175 C. Remove plastic wrap and bake for about 15 minutes until brown.

預熱焗爐,375F 或 175C,焗十五分鍾至金黃

Cook the baked gluten pieces in boiled water for 20 to 30 minutes.

放焗好的麵筋放入煱內用熱水煮約 20 至 30 分鐘。

Drain all water out from the gluten pieces, put them into three different pans and cook each pan with the following ingredients until almost dry. You can put the cooked gluten pieces in the fridge for 4 hours if you want to serve it cold.

煮好後搓乾麵筋的所有水。然後分開3份。每份加入以上的材料落鑊煮到差不多乾水。如果喜歡凍食,可以放入雪櫃四小時,冷卻後便可享用。
