Chicken Piccata | Juicy and flavorful chicken breast - the easy way!

🍽Today we will be making: Chicken Piccata

🔪The tools you will need:
Cutting Board

Large bowl/platter
Citrus juicer - http://bit.ly/2YGA27Z

Large saute pan - http://bit.ly/2MgznGZ

🥩The ingredients you will need:
•2 skinless/boneless chicken breasts, butterflied and then cut in half
•Kosher salt and freshly ground black pepper
•All-purpose flour, for dredging
•4 tablespoons butter
•3 tablespoons extra-virgin olive oil
•4 tablespoons fresh lemon juice
•1/3 cup chicken stock
•2 tablespoons brined capers, rinsed
•2 tablespoons fresh parsley, chopped
🔷The steps you will take:
1. Season chicken with salt and pepper.
2. Dredge chicken in flour and shake off excess.
3. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil.
4. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes over medium high heat.
5. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate.
6. Into the pan add the lemon juice, stock and capers - bring to soft boil (medium low heat), scraping up brown bits from the pan for extra flavor.
7. Check for seasoning and return the chicken to the pan and simmer for 5 minutes (medium low heat).
8. Remove chicken to platter.
9. Add remaining 2 tablespoons butter to sauce and whisk vigorously (medium heat).
10. Pour sauce over chicken and garnish with parsley. Serve hot.
