Ingredients:
6-7 large green chillies 🌶️
1 big boiled potato 🥔
1 teaspoon cumin seeds (jeera) 🌱
1 teaspoon asafoetida (hing)
1 teaspoon ajwain seeds (carom seeds)
1 chopped onion 🧅
Fresh coriander, chopped (to taste) 🌿
Oil for deep frying 🛢️
Salt, to taste 🧂
1/2 teaspoon amchur powder (dried mango powder)
1/2 teaspoon coriander powder
1/2 teaspoon red chili powder 🌶️
1.5 cups besan (gram flour)
1/3 cup water (adjust for consistency) 💧
Method:
1. Prepare the Flavorful Filling:
Heat oil in a pan over medium heat.
Add cumin seeds, hing, and ajwain seeds. Sauté for about a minute until aromatic.
Toss in the chopped onion and sauté for 3-4 minutes until it turns translucent.
Mix in salt, amchur powder, coriander powder, and red chili powder. Stir well!
Add the mashed boiled potato and combine thoroughly.
Finally, fold in the chopped coriander and set the filling aside to cool.
2. Get the Green Chillies Ready:
Using a small knife, make a slit on one side of each green chili, keeping the stems intact. This creates a perfect pocket for stuffing!
3. Stuff Those Chillies:
Carefully fill each slit green chili with the delicious potato filling.
4. Whip Up the Batter:
In a mixing bowl, combine besan with enough water to create a smooth batter. Aim for a thick consistency that will coat the chillies perfectly!
5. Fry to Perfection:
Heat oil in a deep frying pan over medium heat.
Dip each stuffed green chili into the besan batter, ensuring an even coat.
Gently place the batter-coated chillies into the hot oil.
Fry until one side is light golden, then carefully flip and fry until all sides are crispy and golden brown.
6. Serve and Enjoy:
Remove the crispy Mirchi Bajiya from the oil and drain on paper towels.
