Do roasted rye crisps spike your blood sugar? I tested it with CGM!

I ate 50g of oven roasted rye crispbread, which contains about 30g of carbs. My blood sugar went from 5.4 mmol/L (97 mg/dL) to 6.9 mmol/L (124 mg/dL) in one hour — that’s a 28% spike.

Although it's a high-carb snack, rye digests slower than refined flours. It kept my blood sugar under 7.9 mmol/L and below the 30% spike threshold. Want to reduce the spike even more? Try pairing with healthy fats like avocado or protein like cottage cheese.
