🍋 CREAMY VEGAN LEMON GARLIC PASTA – the brightest, silkiest pasta sauce ever! Cashew cream blended with lemon, garlic & nutritional yeast + tender broccoli & peas = fresh, zesty, comforting dinner in 15 minutes. High-protein, dairy-free, meal-prep friendly – tastes like spring in a bowl!

FULL RECIPE (serves 2):
Creamy Lemon Garlic Sauce:
½ cup raw cashews, soaked in boiled water 10 mins
¾ cup unsweetened oat milk (or soy)
2 tbsp nutritional yeast
Juice ½ lemon
1 tsp lemon zest
1 clove garlic
½ tsp salt (or more to taste)
Pinch chilli flakes
Black pepper
Pasta & Veg:
Pasta for 2 (reserve ~¾ cup cooking water)
1 clove garlic, crushed
2 tsp oil
1 cup veggies (broccoli + frozen peas shown)
Cook pasta al dente → reserve water → blend soaked cashews + milk + nooch + lemon juice/zest + garlic + salt/pepper → sauté garlic + veg 2 mins → add sauce + ¼ cup pasta water → simmer & thicken 2–3 mins → toss with pasta + extra water → serve hot!
