Ingredients:

3 - 4 large onions, sliced into 14 inch sections
1 cup all purpose flour
3⁄4 teaspoons salt
1 teaspoon pepper
1⁄4 teaspoon cayenne pepper
1 cup cold, cold sparkling water
3⁄4 cups corn starch
2 cups bread crumbs (I use Italian seasoning or Panko)
3⁄4 quarts (3/4) litre of vegetable oil for frying

Additional Notes:

Onion Selection: Choose large, firm onions for the best results. Sweet onions like Vidalia or Walla Walla work well, but you can also use yellow or white onions. Make sure to slice the onions into thick rings, approximately ½ inch (1.3 cm) in width, for that satisfying crunch.

Soaking the Onions: To achieve extra crispy onion rings, soak the sliced onions in cold water for at least 30 minutes before coating them. This helps to remove excess moisture and results in a lighter, crisper texture when fried.

Dry Coating Technique: For an extra crispy and flavorful coating, try using a dry coating technique. After soaking the onions, pat them dry with paper towels and then dredge them in a seasoned flour mixture. This will create a light, crispy crust that adheres well to the onions.

Seasoning Options: Don't be afraid to experiment with different seasonings in the flour mixture. Traditional options include garlic powder, paprika, cayenne pepper, salt, and black pepper. You can also add herbs like dried oregano or thyme to enhance the flavor profile. Adjust the seasonings to suit your taste preferences.

Oil Temperature: It's crucial to maintain the right oil temperature for perfectly crispy onion rings. Heat the oil to around 350°F (175°C) before adding the rings. Use a candy thermometer to monitor the temperature throughout the frying process and adjust the heat accordingly. This will help prevent greasiness and ensure a crispy exterior.

Frying in Batches: Avoid overcrowding the fryer or skillet when cooking the onion rings. Fry them in small batches to allow for even cooking and to maintain the oil temperature. Overcrowding can lead to uneven browning and soggy rings.

Draining Excess Oil: After frying, transfer the cooked onion rings to a wire rack or paper towels to drain off any excess oil. This will help keep them crispy and prevent them from becoming greasy.

Serving Suggestions: Crispy onion rings are a fantastic side dish or appetizer. Serve them hot and fresh, and consider pairing them with your favorite dipping sauces like ketchup, barbecue sauce, ranch dressing, or aioli. These flavorful accompaniments will enhance the overall taste experience.

Reheating: If you have leftovers or need to reheat the onion rings, it's best to use an oven or toaster oven instead of a microwave. Reheating in the oven at a low temperature (around 300°F or 150°C) will help retain their crispy texture.
