How I Make Watermelon Brandy - Part 1, The Wash

Bit of an experiment to make a Watermelon Brandy using only Watermelons and no water.

Very positive results from the process.

Recipe:
To duplicate this process in the video you will need:
* 10'ish Watermelons contents liquefied and filtered to remove pulp
* 10gms Lalvin EC1118 yeast
* 1 Campden tablet (crushed)
* 1kg Raisins roughly chopped
* 4.5kg Dextrose

Start mashing watermelons until you have sufficient juice volume. In my case it was 10 Melons to give 23 ltrs of juice.
Add Raisins then add the crushed Campden tablet and stir thoroughly.
Wait 24 hours.
Bring Mash up to yeast pitching temperature, in my case it was 28C to 30C
Add Dextrose, in my case I took into account the juice having 5% potential ABV so I added 4.5kg Dextrose to bring up the potential SG to allow 15% ABV
Hydrate yeast and add to wash.
Wait for fermentation to stop, then wait however long you want to allow all sediment to settle giving you clear liquid.
If you have any more or less than 23 ltrs, you will need to add or decrease the Dextrose on multiple events and take the Specific Gravity on each event.
