Ozousui • Japanese Rice Porridge

I hope this video finds you well:) How are you?

Where ever you may be, this is tough right? Seriously tough times. It’s like our freedom has been restricted in one day like a light switch. One day you’re able to hug and be with the people that you care and love for and the next, you’re on a safer at home program. But some how deep inside, I know the light is still there❤️. Right now, let’s care for one another, and be mindful of one another:) We’re all in this together.

So, I wasn’t sure how to go about this with everyone living on limited resources at the moment but what hasn’t changes is that we need to, even more so now, take good care of our health🙂 We tend to reach for comfort. Me too. But we can make comfort healthy!

Nourishing our body with warm immune supporting foods like ginger, brown rice, green onion, miso is essential. In Japan, rice porridge is a “hope you feel better”, easily digestible medicinal food that your mom makes for you when you’re not feeling your best. Kinda like chicken noodle soup:) hope you enjoy:)😊

You cannot go wrong with this:) Enjoy and have fun!

Recipe (serves 2-4)
0.5 cooked (leftover) rice (brown or white)
1 green onion, chopped
1 tablespoon ginger, grated
1 1/2 tablespoon miso
1 egg
2 cups water

1. In a ceramic pot (any deep pan will work), add rice, water, and cover. Heat to med-high until it starts to bubble, and the rice absorbs some of the liquid. About 5-8 minutes. Try not to let the rice absorb all the water. Add more water if needed.

2. Add miso, grate in ginger, combine and cover. Simmer for a 2-3 minutes.

3. Add in egg. Top with green onion. Cover, turn off heat and let the egg cook.

4. Enjoy with umeboshi, shredded seaweed, or pickles:)
