*Ingredients*

- 2 large onions, finely chopped
- 4-6 green chilies, chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 2 tablespoons vegetable oil
- 2 hard-boiled eggs, chopped
- Fresh cilantro, for garnish

*Instructions*

1. Heat oil in a pan over medium heat.
2. Add chopped onions and sauté until they're translucent and lightly browned.
3. Add chopped green chilies, ginger paste, and garlic paste. Sauté for another minute.
4. Add turmeric powder, red chili powder, and garam masala powder. Mix well.
5. Add salt to taste and mix again.
6. Add chopped hard-boiled eggs and mix well.
7. Reduce heat to low and let the mixture simmer for about 10 minutes, stirring occasionally.
8. Garnish with fresh cilantro and serve with idlis, dosas, or rice.
