short work week meal prep!! I absolutely love turkey so I look forward to thanksgiving every year. I swear I could eat leftovers for weeks and weeks and never get sick of it. Anyone else?! 🤪
PUMPKIN MUFFINS
•In a bowl, mix 1 cup Kodiak cake mix, 1 cup egg whites, 1 can pumpkin puree, 1 scoop of protein powder, 3 tbsp brown sugar (use brown monk fruit for lower calorie), 3 tbsp sugar (use monk fruit or stevia for lower calorie), 1 tsp of vanilla extract + pumpkin spice and cinnamon to taste.
•Bake in oven at 350 for 30 minutes.
LUNCH LEFTOVERS
•My dad sent me home with turkey and stuffing leftovers from Thanksgiving, so I sorted that into Tupperware and cooked up butternut squash mashed.
•For the butternut squash mashed, I chopped it up into small cubes. Coated it with olive oil, salt, pepper. Baked in oven at 400 for 25 minutes. Poured it into a bowl with some butter and cinnamon. Mashed it.
OVERNIGHT OATS
•Mix 1.5 cups oats, 3/4 cup almond milk, protein powder, chia seeds, two big tablespoons greek yogurt, chopped apples and cinnamon
