Introducing a BRAND NEW DESIGN OF CHEF KNIFE. It is called the “Niswonger” - the name of the amateur chef who designed it. It is the contours of handle and blade combined that makes this chef knife so unique.

“What I like and trying to achieve is this: Most chef knives are made for food prep by chefs standing over a counter in a certain position. However try sitting and slicing or cutting and it’s awkward. Counter heights differ. People differ in heights, some shorter, some taller. A lot of people sit at a table and prep their food. People with arthritis have special challenges. Having a balanced knife that functions in chop or slice mode is very difficult with long flat profile chef style knives. That’s where the Niswonger comes in.

“Niswonger Chef Knives” are made from high carbon steel. High carbon is the steel of choice for many chefs. Easy to sharpen to the cutting edge you want. Want razor sharp? No problem! While not stainless, high carbon steel takes minimal care. Over time your knife will develop a beautiful patina. If you prefer, you can keep the satin finish with 500 grit sandpaper.
“Niswonger Chef Knives” are available with a variety of exotic hardwood handles. You can also have one made with the handle of your choice. We can also custom make a handle with material that you supply. As an example one person wanted his handles made from an Osage fence post his Grandfather had sunk in the ground 150 years ago. This shows the durability of some woods.
The “Niswonger Chef Knife” also makes an excellent Backpacking and Camping Chef Knife when combined with a Kydek sheath.
