Udupi Kashi Halwa ಉಡುಪಿ ಕಾಶಿ ಹಲ್ವಾ उड़ुपी काशी हल्वा using Mealthy Multipot / Instant Pot

Ingredients:
For making 400gms of Kashi Halwa
3 tsp, Ghee/ Clarified Butter
600 gms, Winter Melon/ Ash Gourd, De-seeded and Grated
15 strands, Saffron/Kesar
1 pinch, Salt
200 gms, Raw Cane Sugar
1/4 piece, Lime/ Lemon juice
Cashewnuts for Garnishing
Optional 1/2 tsp Cardamom powder

Directions:
00:00 Intro: Udupi Kashi Halwa ಉಡುಪಿ ಕಾಶಿ ಹಲ್ವಾ उड़ुपी काशी हल्वा using Mealthy Multipot / Instant Pot
00:16 add 3 tsp, Ghee/ Clarified Butter and Spread ghee at the bottom of the pot
00:31 add 600 gms, Winter Melon/ Ash Gourd, De-seeded and Grated. Do not squeeze the water out of winter melon after shredding
00:52 add 15 strands, Saffron/Kesar to 2-3 tbsp melon juices left while shredding, warm this mixture & Spread Saffron/Kesar water in pot
01:14 add 1 pinch, Salt; Salt improves the taste of the halwa
01:22 add 200 gms, Raw Cane Sugar
01:33 add juice of 1/4 piece, Lime/ Lemon squeezed; Lemon juice will stop crystalization of sugar after cooling down.
01:49 Garnish with Cashews
02:03 Close lid; for Instant pot & Multipot 1 adjust valve in Venting mode; We are going to cook this halwa in Venting Mode
This recipe cannot be made in Mealthy Multipot 2
02:20 Select Steam Mode, High Pressure, Adjust Timer for 12 minutes
02:29 Start a timer for 45 minutes using a timer device of your choice; The valve will seal and your cook timer will start after 30-35 mins
Winter Melons by nature holds excessive amount of water, you might feel that this recipe takes long but you do not have to do any sauté to remove water as you would do in the traditional method.
Start an optional timer of 45 minutes as a safe reminder for yourself, the cook time of 12 min will begin around 30-35 min and your halwa should be ready after cook time is over.
The quantities & cook time shown in this video will remain same for 3QT and 6QT cookers and will yield around 400gms of halwa. You can find alternate quantities along with the cook time in the description of this video.
You will observe that the amount of steam venting out of valve reduces drastically towards the end of cooking process.
Your halwa might chard a little at the bottom of the pot, the charring is part of the caramelization process and will be easily released while stirring due to the coating of ghee at the bottom of pot.
03:55 After cook timer for 12 min is over, press Cancel, wait for float valve to fall down; Open lid and stir the halwa while it cools down
04:13 Add 1/2 tsp Cardamom powder per your preference to enhance fragrance
