For Dough:
• 2 cups All-Purpose Flour (Maida)
• 4 tbsp Ghee (Clarified Butter)
• Water (as needed)
For Filling:
• 1 cup Khoya (Mawa)
• 1/2 cup Powdered Sugar
• 3 tbsp Desiccated Coconut
• 2 tbsp Raisins
• 2 tbsp Chopped Almonds & Cashews
• 1/2 tsp Cardamom Powder
For Sugar Syrup:
• 1 cup Sugar
• 1/2 cup Water
• A few Saffron Strands (optional)
• 1/4 tsp Cardamom Powder
For Frying:
• Ghee or Oil

Instructions:
Step 1: Prepare the Dough
1. In a large bowl, combine maida and ghee.
2. Mix well until it forms a crumbly texture.
3. Gradually add water and knead a stiff dough. Cover and let it rest for 30 minutes.
Step 2: Prepare the Filling
1. Crumble the khoya and roast it on low flame until it turns light golden. Let it cool.
2. Add powdered sugar, dry fruits, coconut, and cardamom powder. Mix well and keep aside.
Step 3: Prepare the Sugar Syrup
1. In a pan, combine sugar and water.
2. Boil until it reaches a one-string consistency.
3. Add saffron strands and cardamom powder for flavor. Set aside.
Step 4: Assemble the Chandrakala Gujiya
1. Divide the dough into small balls and roll out thin circles.
2. Place a spoonful of the filling on one circle, cover with another circle, and seal the edges using a little water.
3. Twist the edges to give it a decorative look.
Step 5: Frying
1. Heat ghee in a deep pan.
2. Fry the gujiyas on low-medium heat until golden brown.
3. Dip the fried gujiyas in the warm sugar syrup for a few seconds, ensuring they are well coated.
Step 6: Serve and Enjoy
Let the gujiyas cool slightly, then garnish with chopped nuts and serve!
