Kamado Joe Classic 3 Reverse Seared Irish Picanha
This was a the VERY FIRST cook on our new Kamado Joe Classic 3 and man was it a good way to break it in.
This is one of our absolute favourite cuts of beef on the BBQ, the Argentinean legend - Picanha. This is particular one is more local and is from an Irish farmer in the wexford valley, we sourced it through Hixons butcher. We love that the fat cap is prominent but not so thick that the ratio of fat to meat is too high.
We do them in two ways, either thickly sliced and skewered - the traditional Argentinian bbq way or the whole picanha reverse seared - which is what we opted for here.
Served simply on some home made toasted Sourdough bread with a spicy chimmichuri sauce - match made in heaven. This is a great casual way to serve hungry guests this summer ( or any month for that matter) and its a real showstopper.
