Alain Passard is one of France’s most influential chefs, and owner of the prestigious Michelin three-star restaurant Arpège in Paris, famed for its vegetarian cuisine. As well as getting the rare chance to go behind the scenes at Arpège, the FT’s Paris correspondent Harriet Agnew visits Passard’s organic garden in Normandy and enjoys a remarkable seven-course lunch with the chef.
