Make Vegan French Toast At Home

In short the name “french toast” means “lost bread”. Why is bread lost? You may ask. Well it's soaked in a lot of isms and so it gets lost... that's my theory. Anyhoo, I made some the other day in the studio with my long-time cameraman Ruben filming me. Who by the way, EATS everything I make. And when the man loves something, he gets into it like a food freight train on full speed ahead and EATS it all. You don't get to see that part. Damn it!! Super entertaining when the cameras are turned off. I should have a film crew filming the film crew LOL. 🤣

Anyways I got a kick out of this recipe as it really was good. Like really good if say so myself. 😊
Soaked in isms and lost in flavour. This is an epic recipe. I topped it with fruit and I finished it off with a good splash of cultured coconut yogurt from my cooking program called "Let’s EAT Light & Easy” (Here's the link if you're interested - https://chefcynthialouise.com/product/lets-eat-light-and-easy/) OH MY it's that good! Speaking of my new program, Let’s Eat Light & Easy cooking class, unlike the French toast, you won't get lost here lol 🤣, created this class so that even new plant eaters and soon-to-be plant eaters will know their way in the kitchen. Very easy and light recipes that are meant to nourish your guts with pre and probiotics.

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
For the Toast:
1 cup Coconut Milk or any other plant-based milk
1/2 tsp Vanilla
1/4 tsp Cinnamon
1/2 tsp Allspice
2 Tbsp Almond Meal
Coconut Oil, for frying
4 slices of Sourdough or Gluten-Free Bread
A pinch of Salt

For the Toppings:
1/4 cup Pecans
2 Bananas, sliced
1 punnet Strawberries, sliced
2 Tbsp Cacao Nibs
4 Tbsp Cacao Yogurt
Maple Syrup, as much as you like
A pinch of #LOVE

𝗠𝗘𝗧𝗛𝗢𝗗
Heat a pan on medium-low.
Whisk together the milk, vanilla, and spices and let it steep for 5 minutes.
Strain, discard spice bits, and stir in the almond meal.
Add the bread slices (one at a time) to the infused milk and allow them to soak in the liquid.
Add a splash of coconut oil to the hot pan and fry the bread slices until golden brown and crispy around the edges on both sides.
Top with the pecans, banana slices, and strawberries.
Sprinkle with cacao nibs, drizzle with coconut yogurt and maple syrup and enjoy!
