Ingredients:
1 litre sugarcane juice (Ganne ka ras)
1 cup rice (soaked for at least 30 minutes)
1/2 cup grated coconut
1/4 cup chopped almonds
1 teaspoon elaichi (cardamom) powder
Instructions:
1. In a pan, heat the sugarcane juice over medium heat.
2. As it starts to heat, remove the foam that accumulates on the surface to clear impurities.
3. Add the soaked rice to the sugarcane juice and let it cook over low to medium heat for about 1 hour or until the kheer reaches the desired consistency. Stir occasionally.
4. Once the rice is cooked and the kheer has thickened, add elaichi powder, grated coconut, and chopped almonds. Mix well.
5. Cook for an additional 5-10 minutes to let the flavors meld.
6. Remove from heat and let it cool slightly before serving.
7. Serve the sugarcane juice kheer hot, garnished with additional almonds if desired.
