Homemade Kimchi Recipe

Kimchi is a fermented food that comes from Korea that is often eaten as a side dish with other food.
Recipe:
1 Napa cabbage cut into quarters
Soak in a brine solution for 1 hour
8 Pieces of green onion
Chili Paste:
2 Cup chili powder
2 Heads of garlic
4 inch piece of ginger (peeled)
6 tsp soy sauce
4 tsp sugar
4 tsp salt
4 tsp vinegar
1/2 water
Blend until smooth

Layer chili paste into layers of cabbage with green onion
Place in a mason jar for 5 days to ferment and then enjoy or place in fridge for long term storage.

I found that 1 head of napa cabbage makes 4 x 32 oz Mason Jars worth of Kimchi.
